Sichuan Chilli Crab

Sichuan Chilli Crab is a fiery and flavorful dish that marries the rich sweetness of crab with the bold, numbing heat of Sichuan peppercorns and dried chilies. The crabs are stir-fried to perfection in a fragrant, spicy hotpot base made from beef tallow, ginger, scallions, and dried chillies, complimenting the natural sweetness of the crab meat. This dish is best enjoyed with steamed buns or rice to soak up the delectable sauce.


Recipe

1. Start by roasting the ginger and shallots in a neutral oil till fragrant over medium heat
2. Add hotpot base
3. Add in broken down crab and toss to cover all the pieces
4. Incorporate the head butter into the sauce
5. Add 100mls of water, lotus root, and scallion whites. And cover with a lid for 7 mins
6. Remove lid to let excess water boil off
7. When ready, garnish with scallion greens and enjoy!

The white of 2 scallions
100 g of Hot Pot Base
